1/2 peeled can of
Fresh Pine Apples
Quartered lenghtwise and cored
3/4 stick of Unsalted Butter
3/4 cup of Grand Momma s Light Brown Sugar
* Batter Instruction Listen up closely on here :*) *
1 1/2 cups of All Purpose Flour
2 to 3 teaspoons of Ground Cardomom
2 teaspoons of Baking Powder
1 /4 teaspoon of table Salt
3/4 teaspoon of unsalted Butter (soften )
1 cup of Gradulated Sugar
2 Large Eggs , 1 teaspoon of Vanilla
1 Tablespoon of Dark Rum
1/4 cup of Pineapple of Pineapple Juice
2 Table spoons of Dark Rum lighty sprinkle on the top cake
use a well seasoned 10 inch cast iron skillet
and Preheat the oven at 350 degrees

Cut pine apples crosswise to perfection in 3/8 inch
thick pieces then add the melt butter to the skillet
then Add the brown sugar ,and Let it Simmer to moderate heat
Continuing Stirring for 4 minutes , Then Remove from heat
Arrange pine apple on the top of the sugar mixture nicely
Overlapping the pieces slightly
Batter instructions
Sift together the flour cardomon ,baking powder
and salt ,then Beat the butter into a very large
bowl with a large mixer until it becomes light and fluffy
then gradually beat into the gradulated sugar Add the eggs
1 at a time , Beating well after each addition ,beat in va
nilla and the dark rum , Add the 1/2 cup of flour mixture to
and Beat it on a low speed , just until it is blended :*) .
Beat in pine apple juice then add the remaining flour mixture
( batter may looked curred ) Spoon batter over pine apple
topping and spread evenly . Bake cake into the center of
the oven until golden brown , Until the tester comes to be
completely clean which takes 45 mintues , Let cake stand stay
into the skillet for 5 mintues then wait to cool the pan
down Invert the plate over the skillet Invert the cake onto
the pan ( keeping the plate pressed firmly together ) and ,
Replace all of the pine apple that stuck to the bottom of
the skillet sprinkle dark rum over the top of the cake and
let it cool down on a kichen plate on to a nice & sturdy rack
But dont forget one sweet treat the Low fat vanilla ice cream
